Easy Veggie Cup Recipe

I always make my meals ahead of time based on my Meal Plan for the week. This recipe in particular is an oldie but goodie and I use it very often. They are veggie egg cups and they are simple to make and low maintenance on you. I used spinach only in this batch but I have used onions, bell pepper, broccoli or whatever veggies I have that need to be used. 

For this recipe you will need:
4 eggs
1 cup fresh spinach

If you have a large family and need to make lots of these, just follow that model using 4 eggs and one cup.

Just crack all the eggs in a bowl and whisk. 

You can either put the spinach in the whisked eggs or you can put it in once the eggs have been poured into a greased muffin tin.

Just bake the veggie cups at 350 degrees for about 30 min.

They turn out beautiful every time!
